Great article, but i would like to correct this phrase:"Mediterranean countries such as Italy (baccalà mantecato), Portugal..."
While this dish may be eaten in Portugal, and it should be included, the country does not border the Mediterranean.
This wiki page has it right:
Instead i would suggest:
"Mediterranean countries such as Italy (baccalà mantecato),the Greek Cyclades (brantada), Portugal (brandade de bacalhau) and other regions of Spain...“
