Confusing Caption

In the used bookstore today I saw in a book that this structure is used for reaching the surface of the sediment safely so the animal can breathe (like a straw). Is this correct? I didn't buy the book because it was old (70s) and very large and cost something like $14; too much for such an old book. I think the title was something creative like "Shells".
